KIRITSUBO (basic technique)

The last article shows the powerful carbonated water will be created with The KIRITSUBO, in sefety.

This time, let me explain the basic tecnical matter on KIRITSUBO.

  1. The components of KIRITSUBO and their role.
  2. The material for carbonated beverage.
  3. The process of the carbonation.


The comprehension of technical matter leads to "well organized preparation or creation" and " relief."
Don't worry! the contents of this article is easy to understand. however, before reading this article, Please check the article last time.






The components of KIRITSUBO and their role


(The detail explanation of each component, We will explain it in another article. This time, there are brief explanations in this article. sorry... )






Caps

connects plastic PET bottle and connection pipe. they are made of POM (polyoxymethylene).

Connection pipes

connect the cap, the ball valve, the relief valve, or the pressure gauge. they are made of POM.

Ball valves 

control the flow of liquid or air, made of PVC; main body is PVC;

Pressure gauges

measure the pressure inside KIRITSUBO; if you know the inner pressure of KIRITSUBO during creation of soda, you can control the cabonic concentration; the appricable pressure range is from 0MPa to 1.0MPa compared with barometric pressure; (the gauge referes the "gauge pressure"; gauge pressure is zero-referenced against ambient air pressure, so it is equal to absolute pressure minus atmospheric pressure, e.g. the 0.55MPa means 0.65MPa of ambient air pressure);


Safety Relief valves

are used to control or limit the pressure in a system or vessel; it protect against over pressure by venting excess gase from the KIRITSUBO; the valve will be activate, when KIRITSUBO's inner pressure over 0.65MPa(0.65MPa equals 94.27psi).

Relief valve covers 

prevent water from spouting out of KIRITSUBO; made of POM..

Plastic PET bottles 

have pressure-resistant strength (1.6MPa), afeter the production; however the strength will be decreased by the scratch or the direct sunlight exposure for a long time; made of POM ;

Filters 

allow water to pass through it, while powder(citric acid and carbon bicarbonate) is prevented from passing through.

Height adjustable stands 

are for a fall prevention fixture of KIRITSUBO; you can adjust its height.









Raw material (consumed during soda creation)



Beverage: 

water, juice, coffee, tea, sake, wine, milk, plum wine; water is the easiest to create in this list, while milk is the most diffecult in this list; so, if you are beginner, please try water at the first step.

Sodium bicarbonate(NaHCO3):

it causes the CO2 generation for carbonation with citric acid and water. ( When sodium bicarbonate dissolve in water, its solution turn weak alkaline).

Citric acid: 

it causes the CO2 generation for carbonation with sodium bicarbonater and water.  ( When citric acid dissolve in water, its solution turn weak acidity).

Water: 

it causes the CO2 generation for carbonation with citric acid and sodium bicarbonate.








How to carbonate the drink with KIRITSUBO?


(this method is for normal strength soda creation for the beginners.)
(There are the shrewd technique, but We omit it this time, because this article is for beginners.)

1.Chilling the beverage.

Please chill the beverage in the refrigerator. the low temperature is preferable for carbonation, but don't freeze the drink; The more beverage is chilled, the more CO2 is dissolved into water.

2.Preparing the set of KIRITSUBO.

Please prepare the KIRITSUBO main body, height adjustable stand, plastic PET bottle for 1000 ml, plastic PET bottle with filter, citric acid, sodium bicarbonate, measuring cup, measuring spoon, funnel. Please confirm if the relief two valve covers is tighten on the KIRITSUBO.
From left to right, funnels, a measuring cup, a height adjustable stand, a plastic PET bottle with filter, a plastic PET bottle 1000 ml, KIRITSUBO main body, measuring spoons, sodium bicarbonate, citric acid.

3.Setting the container for generation of CO2

Fill 150-175 cc(5.1-5.9 oz) of water (or warm water) into the measuring cup. Set the funnel on the plastic PET bottle with the filter. Pour the water of measuring cup into the plastic PET bottle with the filter.


Please prepare another funnel which is not wet, and set it on the plastic PET bottle with the filter. provide one scoop(30 cc) of sodium bicarbonate on the filter, and then one scoop of citric acid on the sodium bicarbonate, with the measuring spoon.

(Powder is yellow or purple colored in the illust, but actually they are both white color. )
The powder of sodium bicarbonate and citric acid is above the filter top, and water is under filter top for now. So, they three are not touch yet. It means the chemical reaction for CO2 has not been activated yet.


Though we described "one scoop of material," you can arrange the quantity of the material; for example, half scoop of material for weak soda or half and one scoop for ultra soda.
For the sodium bicarbonate to be cast on and spread over the filter top is the knack not to start chemical reaction.
It also may ok if you cast the sodium bicarbonate after casting the ctric acid; neverthless, sodium bicarbonate casting before citric acid is better.
The chemical reaction speed between sodium bicarbonate and citric acid increases in proportion the water temperature. so, if you need to quicken the creation, plese use warm water; however don't use the hot water exceeding 50 degrees centigrade(122 degrees Fahrenheit).


4. Preparing the plastic PET bottle of beverage.

Pour the 500ml of chilled beverage (steps 1) into the plastic PET bottle of the capacity of 1000ml.

As the illustration showing, half full of the beverage is filled in the bottle of 1000 ml. it's no problem. it's for the purpose to facilitate bottle to shake up and down, after step 5.


5. Create sealed space with KIRITSUBO

Install the bottle of step 4 to KIRITSUBO; however it is unbalanced since it's standing with left bottle axis. so, please support KIRITSUBO with height adjustable stand at the relief valve cover position.

Install the bottle of step 3 to KIRITSUBO. Please make ball valve 2 closed and valve1 opened.

With this step 5, the sealed space have been completed. the right side of the illustration shows the virtual cutting section of KIRITSUBO. the closed red shows the sealed space.


6. Generation of the carbon dioxide.

Grasp the both bottles with both your hands lightly, and gaze at the bottle with filter, especially.

To start the chemical reaction for CO2, you have to combine sodium bicarbonate and citric acid and water. So, shake right side bottle up and down, and then move the water through the filter top, and the water reach to the powder, as the left illust shows.
At this time, please be ware of not passing through the "x" mark in the illust, because if the water pass the "x" mark, the chemical compaund of sodium bicarbonate may mix with the beverage and spoiling beverage taste or flaver.


7.Strengthen the of pressure in the KIRITSUBO, and then dissolve CO2 into the beverage.

The chemical reaction (between sodium bicarbonate, citric acid and water) genarates the CO2, and causes the pressure increase; you can monitor the pressure value by watching the pressure gauge installed on the KIRITSUBO.
When the pressure rise is caused, please watch the both bottle and the pressure gauge, carefully.


When you comfirm the pressure rising, shake the left bottle up and down. This shaking cause the dissove of CO2 into the beverage, because of the water spreading and facing to CO2; Spreading means the water's surface area increase and touching area to CO2 increase. finally The inner pressure value is decreased by shaking.

Basically, the right side bottle's shaking cause the increase of inner pressure(CO2 generation), and The left side shaking case the decrease of inner pressure(CO2 dissolve)

The following is caustion;
Please control the inner pressure valve less 0.55MPa, since the relief valve is activate at around 0.55MPa and relieve CO2 out of KIRITSUBO. It means you waste the CO2.

8.Finish carbonating beverage at the exact time when you want to quit creation.

When the inner pressure reach the porpose value, close the ball valve 1 ,and half-open the ball valve 2. don't full-open valve2, becase the foam at right bottle will grow up and rise toward valve 2, and then blowout.


So, please half open the valve 2 slowly and wait until the foam break and inner pressure decrease.
When foam destroy and inner pressure is decreased, remove the right bottle from KIRITSUBO, and then shake KIRITSUBO up and down strongly, around 15 stroke, to increasing facing area between beverage and CO2.



9.The completion of carbonated beverage. 

There is no restriction afterwards; you can drink it or save it in the container.
When the shaking is finished, open ball valve 1, and relief the inner pressure.

Remove the bottle of carbonated beverage from the KIRITSUBO.
You can drink it or save it in the plastic PET bottle; when you save it, the 500ml-capacity bottle is recommended, and pour the carbonated beverage fully to this bottle. full pouring is good for save the carbonation strength.
